The Cuisinart SM-55BCC has a generous 800 Watt motor and will handily mix through all of your mixing tasks, from whipping cream to kneading the heaviest bread dough.
With a 5.5 Quart capacity stainless steel mixing bowl, there is ample room to easily mix double batches of bread or even several batches of cookies.
Cuisinart suggests that it has enough room and power to handle a maximum of:
- 12 cups of flour for yeast dough
- 5 cookie batches (at 2 dozen per batch)
- 12 egg whites
- 6 cups of whip cream
Speeds and Controls
The control panel for the mixer is located on the side of the machine. You will see two areas.
The top panel contains the timer display and settings. Beneath that is a dial that allows you to choose from one of twelve mixing speeds. On the dial are two buttons. One is an on and off button to start and stop mixing, and the second is the folding feature button.
Choosing a Speed, Starting and Stopping
Unlike most mixers, the Cuisinart SM-55BCC allows you to select your speed before starting mixing action. It might seem risky to select high speeds before turning it on, but this stand mixer utilizes a feature that slowly transitions from slower to higher speeds, reducing splashes and splatters.
Once the correct speed is selected, press the “on/off” button. Press it again to stop.
Beneath the “on/off’ button on the dial, you will see a “Fold” button. This button controls a feature created specifically for folding delicate ingredients into your mixture.
This feature can be used one of two ways. You can either press the button once for a hands-free operation, or hold it down for continuous mixing that will halt when released.
The hands-free operation will see the mixing tool rotate one and a half times before pausing and repeating. To stop this automatic operation, simply press the “Fold” button once more.
Mixing Timer Feature
The 15 minute countdown feature is very easy to set, allowing you to attend to other tasks while the machine does the mixing.
To operate, turn the dial to the speed required. Then, set the timer for the amount of time required to appropriately.
Once the timer is set to the desired amount of mixing time, start the machine and let it go. It will mix for the length of time programmed, then automatically stop mixing and beep to confirm the mixing cycle is complete.
The timer can also be paused at any time and stop mixing without having to reset. This is very handy for adding ingredients or scraping the sides of the bowl. Extra time can also be added to the timer when paused
If the mixer has completed its timed cycle and come to a stop and no action has been taken for 5 minutes it will automatically turn itself off.
Power Ports for Attachments
This model has three power ports located in two different areas on the mixer. The high speed and medium speed ports are located under the lid on top of the machine, while a third mount can found on the front of the power head behind a small door.
The high speed power port located on top of the machine at the back is designed for use with the blender and food processor attachments.
The Medium speed power port, located on the top front, is designed for use with the juicer attachment.

Setting Up the Cuisinart SM-55BCC
This is a tilting head style stand mixer, but it tilts differently than any other tilting head mixer.
The hinges for tilting the head back aren’t located at the base of the mixing head as we see with many tilt head mixers. Rather, the hinges are closer to the bottom and line up about half way up the mixing bowl when the mixing bowl is properly mounted.
A small lever is pulled towards the bowl and the head is released from its position, allowing it to be set it back to its resting position.
When the head is tilted all the way back, it automatically locks it into that position to avoid it from toppling back into the mix. When you lower it back into mixing position, the leaver will again automatically lock.
The mixing bowl can be inserted when the mixing head is lifted. Just place it in its groove, and turn clockwise it until you feel it lock securely into place.
Before attaching the required mixing tool, the splash guard must be put in place, should you choose to use it. This splash guard fits just above where the mixing tools are inserted on the underside of the mixing head – another feature that is unique to this mixer.
The mixing tool can now be inserted. Choose the tool you need to work your mix, such as the flat beater, and place it in the hole and turn. You will feel it lock into place when inserted correctly.
After placing your ingredients in the bowl, lower the head into its active position. You will notice that the splash guard will completely cover the top of the bowl and you won’t have any surprise splatters or flour puffs when turning the stand mixer on.
The bowl, mixing paddle, whisk and dough hook are all dishwasher safe.
The splash-guard is safe for the top-rack of your dishwasher.
The stand mixing unit itself can be cleaned with a damp cloth.
